Ingredients:

• 200 g – Refined Wheat Flour
• 100 g – soya granules
• 1 – Onion
• 1/2 tsp – Ginger paste
• 1/2 tsp – Garlic paste
• 1/2 tsp – Garam Masala powder
• 1 tbsp – Coriander leaves
• 4 tbsp – semolina
• 2 tbsp – Ghee
• Red Chilli powder to taste
• salt to taste
• refined oil

Method:

  1. Mix refined wheat flour, semolina, salt and ghee.
  2. Add sufficient water to make a smooth dough. Cover with a damp cloth and keep aside.
  3. Soak soya granules in warm water for 15 minutes and squeeze out excess water.
  4. Finely chop onions and coriander leaves.
  5. Heat two tbsp oil to a pan, add chopped onions, ginger paste and garlic paste.
  6. Cook till the onions turn light brown in colour and add soaked soya granules.
  7. Add red chilli powder, salt, garam masala and stir-fry till the granules are cooked.
  8. Add coriander leaves and cook till the mixture is almost dry.
  9. Divide the dough into 12 equal portions and roll out into puris of three inch diameter.
  10. Place about two tsp of the granules mixture in the centre of the puri.
  11. Lift the edges and press together firmly to form a pouch.
  12. Deep-fry in hot oil till golden brown.
  13. Serve hot with green chutney.
