Ingredients:
• 250 g – spaghetti
• 1 cup – Spinach
• 4 – Garlic pods
• 3 tbsp – parmesan, grated
• 1/2 – Lemon
• 2 tbsp – Pine Nuts (optional)
• 4 tbsp – Olive oil
• Salt as needed
• 2 tsp – chilli flakes
Method:
- Boil enough water with salt and cook spaghetti in it as per package instructions.
- Once done, drain it and mix a tbsp of oil to it. Keep aside.
- Wash spinach leaves and keep it immersed for a minute. Again, wash it in cold water.
- Chop it roughly and peel and chop garlic finely.
- Heat a pan with 3 tbsp oil in medium heat. Add garlic and cook it for 2-3 minutes in low flame.
- When it turns golden, add spinach and mix well.
- Switch of the flame and squeeze the lemon. Add pine nuts if desired.
- Mix well with the cooked pasta in a large mixing bowl.
- Add cheese, little salt, chilli flakes and mix well.
