Ingredients:

• 1 sachet – cous cous
• Hot water
• 1 – Orange bell pepper
• 1 – large red Onion
• 2 – medium Tomatoes
• 4 – Green chillies
• 2 tbsp – Lemon juice
• 1 tbsp – paprika or ground black pepper
• 4 tbsp – Butter or margarine
• salt to taste

Method:

  1. Chop the bell pepper, onion and tomatoes into small pieces.
  2. Boil half a glass of water. Pour over the cous cous until it covers it completely and leave to soak.
  3. Heat a large non-stick pan for 2-3 mins and add the butter.
  4. Add chillies and wait for it to splutter. Then add the chopped bell peppers and onions.
  5. Cook them till they are half cooked (i.e. a bit crunchy but cooked).
  6. Add the salt, lemon juice and pepper/paprika and stir.
  7. Add the cous cous and fold it in.
  8. Remove from heat, add chopped tomatoes and fold them in again.
