
Ingredients:
• 1 sachet – cous cous
• Hot water
• 1 – Orange bell pepper
• 1 – large red Onion
• 2 – medium Tomatoes
• 4 – Green chillies
• 2 tbsp – Lemon juice
• 1 tbsp – paprika or ground black pepper
• 4 tbsp – Butter or margarine
• salt to taste
Method:
- Chop the bell pepper, onion and tomatoes into small pieces.
- Boil half a glass of water. Pour over the cous cous until it covers it completely and leave to soak.
- Heat a large non-stick pan for 2-3 mins and add the butter.
- Add chillies and wait for it to splutter. Then add the chopped bell peppers and onions.
- Cook them till they are half cooked (i.e. a bit crunchy but cooked).
- Add the salt, lemon juice and pepper/paprika and stir.
- Add the cous cous and fold it in.
- Remove from heat, add chopped tomatoes and fold them in again.
