Ingredients:

• 450 gms – Carrots
• 2 – Leeks
• 1 bunch – Raddish
• 170 gms – Spinach
• 2.5 tbsp – Refined flour
• 60 gms – Butter
• 1.5 litres – Water
• 2 – Egg yolks
• 6 tbsp – Cream
• Salt and pepper to taste

Method:

  1. Wash carrots, leek, spinach and radishes.
  2. Melt butter in a saucepan.  Add sliced leeks and carrots.
  3. Season with salt and pepper and simmer for 5 minutes.
  4. Add water and bring to a boil. Simmer for 10 minutes.
  5. Add chopped spinach and sliced radishes.
    Mix flour in a little cold water and add while stirring.
  6. Simmer until carrots are soft.
  7. Remove from heat, stir in yolks mixed with cream.
  8. Serve immediately with little cheese sandwiches, plain or toasted.
