
Ingredients:
• 450 gms – Carrots
• 2 – Leeks
• 1 bunch – Raddish
• 170 gms – Spinach
• 2.5 tbsp – Refined flour
• 60 gms – Butter
• 1.5 litres – Water
• 2 – Egg yolks
• 6 tbsp – Cream
• Salt and pepper to taste
Method:
- Wash carrots, leek, spinach and radishes.
- Melt butter in a saucepan. Add sliced leeks and carrots.
- Season with salt and pepper and simmer for 5 minutes.
- Add water and bring to a boil. Simmer for 10 minutes.
- Add chopped spinach and sliced radishes.
Mix flour in a little cold water and add while stirring. - Simmer until carrots are soft.
- Remove from heat, stir in yolks mixed with cream.
- Serve immediately with little cheese sandwiches, plain or toasted.
