Ingredients:
• 8 – 10 – Figs
• 1 cup – Orange juice
• 1 tsp – Lemon juice
• 1 cup – soft Brown sugar
• 3 to 4 pinches – Cinnamon powder
• 1/4 tsp – vanilla essence
• For crumble:
• 1.5 cups – plain flour
• 60 g – chilled Butter
• 2 tbsp – sugar, ground
• 2 pinches – salt
• cold water
Method:
- Make a mixture of orange juice and lemon juice.
- Put figs in a shallow bowl, sprinkle this juice all over them.
- Place overnight in refrigerator.
- Crush soaked figs coarsely in a mixer.
- Transfer to a greased baking dish.
- Add sugar, essence and cinnamon and mix well.
- Spread evenly in the container.
- Sieve flour with salt, sugar, cut in butter.
- Mix with fingers or fork till mixture is like large bread crumbs.
- Sprinkle thickly over fig mixture.
- Bake in preheated oven at 170 C for 20-25 minutes or till crust is light golden.
- Cool a little, before serving.
- Serve with or without sweetened whipped cream swirled on top.
