Ingredients:

• 2 bunches Spinach
• 1 packet baby Corn
• 3 medium sized Onions
• 3 Green chillies
• 6 to 8 flakes Garlic
• 3 tbsp – oil
• salt to taste

Method:

  1. Chop the spinach finely and wash well.
  2. Chop the baby corn into big cubes.
  3. Wash and pressure cook the baby corn with little salt till tender but crunchy. (It should be done in 3-4 whistles).
  4. Heat oil in a kadai, add finely chopped onions, crushed garlic and green chillies.
  5. Saute on a low flame till the onions are pink in colour.
  6. Add spinach and saute on a high flame for five minutes.
  7. Add boiled baby corn and salt to taste.
  8. Saute till the spinach is cooked and the water has completely dried.
  9. Serve hot with phulkas.
