
Ingredients:
• 3 cups – Rice flour
• 2 – onions, finely chopped
• 4 – green chillies, finely chopped
• 1 tbsp – carrot, grated
• 1/2 cup- coriander (cilantro) leaves, chopped fine
• 2 tsp – cumin seeds, coarsely pound
• salt to taste
• 1/2 to 1 cup – water for mixing
• oil for shallow frying
Method:
- Mix all the ingredients except the oil, in a mixing bowl. Add enough water to bind all the ingredients together to form a dough.
- Grease a frying pan (or tawa) with a little oil. Take a ball of the mixture (as big as a tennis ball) and place it in the middle of the greased frying pan.
- Flatten the mixture on the pan with your fingers until it is round and flat.
- Spread a little oil on it.
- Cover the frying pan with a lid and cook over a med-low flame until it is cooked (colour changes).
- Remove the lid and fry for a couple of minutes.
- Turn over and fry on the other side for a few more minutes.
- Serve hot with salted butter or mango pickle or coconut chutney.
