Ingredients:

• 3 cups – Rice flour
• 2 – onions, finely chopped
• 4 – green chillies, finely chopped
• 1 tbsp – carrot, grated
• 1/2 cup- coriander (cilantro) leaves, chopped fine
• 2 tsp – cumin seeds, coarsely pound
• salt to taste
• 1/2 to 1 cup – water for mixing
• oil for shallow frying

Method:

  1. Mix all the ingredients except the oil, in a mixing bowl. Add enough water to bind all the ingredients together to form a dough.
  2. Grease a frying pan (or tawa) with a little oil. Take a ball of the mixture (as big as a tennis ball) and place it in the middle of the greased frying pan.
  3. Flatten the mixture on the pan with your fingers until it is round and flat.
  4. Spread a little oil on it.
  5. Cover the frying pan with a lid and cook over a med-low flame until it is cooked (colour changes).
  6. Remove the lid and fry for a couple of minutes.
  7. Turn over and fry on the other side for a few more minutes.
  8. Serve hot with salted butter or mango pickle or coconut chutney.
