Ingredients:
• 1/2 cup – sweet Corn
• 2 cups – cooked Rice
• 1/2 cup – green beans, chopped
• 1/4 cup – soya chunks
• 1 – large onion, chopped
• 1 tsp – Garam Masala powder
• 2 – green chillies, slit lengthwise
• 1/2 tsp – pepper powder
• 2 tbsp – soya sauce
• 2 tbsp – coriander leaves, chopped
• Salt – to taste
• Oil – as required
• 3 – Bay Leaves
• 1/2 tsp – Cumin seeds
Method:
- Cook the soya chunks in salted hot water until they double in volume, drain, squeeze out the excess water, and keep aside.
- Heat enough oil and fry the bay leaves and cumin seeds.
- Immediately add the chopped onions and saute until they turn translucent.
- Add the chopped beans, sweet corn and soya chunks to the onions, and saute for a few minutes.
- Now add the garam masala powder, pepper powder, green chillies and soya sauce.
- Cook on a high flame until the vegetables are half cooked.
- Add the cooked rice and chopped coriander leaves.
- Toss gently until the vegetables and rice are well mixed.
- Serve hot with papads and boiled eggs.
