Ingredients:

• 1/2 cup – sweet Corn
• 2 cups – cooked Rice
• 1/2 cup – green beans, chopped
• 1/4 cup – soya chunks
• 1 – large onion, chopped
• 1 tsp – Garam Masala powder
• 2 – green chillies, slit lengthwise
• 1/2 tsp – pepper powder
• 2 tbsp – soya sauce
• 2 tbsp – coriander leaves, chopped
• Salt – to taste
• Oil – as required
• 3 – Bay Leaves
• 1/2 tsp – Cumin seeds

Method:

  1. Cook the soya chunks in salted hot water until they double in volume, drain, squeeze out the excess water, and keep aside.
  2. Heat enough oil and fry the bay leaves and cumin seeds.
  3. Immediately add the chopped onions and saute until they turn translucent.
  4. Add the chopped beans, sweet corn and soya chunks to the onions, and saute for a few minutes.
  5. Now add the garam masala powder, pepper powder, green chillies and soya sauce.
  6. Cook on a high flame until the vegetables are half cooked.
  7. Add the cooked rice and chopped coriander leaves.
  8. Toss gently until the vegetables and rice are well mixed.
  9. Serve hot with papads and boiled eggs.
