Ingredients:
• 25 – limes
• 1 cup – Vinegar
• 2 tsp – Cumin seeds
• 0.5 tsp – Fenugreek roasted
• 2 – Turmeric
• 3 – Ginger
• 3 pods – Garlic
• 2 tbsp – Mustard Seed
• 1/2 bottle – oil
• 1 – Curry leaves
• 450 gms – Sugar
• 20 – chillies
• 1 tsp – salt
Method:
- Wash and chop each lime into 8 pieces.
- Sprinkle salt and keep overnight.
- Masala:
- Grind cumin, turmeric and roasted methi in vinegar.
- Add mustard seeds and grind a little, and finally add garlic and ginger.
- When done, remove and keep aside.
- Preparation:
- Heat oil in a large vessel.
- Add curry leaves and fry till they change colour and then add the masala and fry for a while.
- Let it cook for a little while, then add sliced green chillies
- Add sugar, vinegar, chopped limes, etc.
- Check the taste, and adjust.
- Boil for half an hour on a low fire.
