
Ingredients:
• 2 cups Rice flour
• 1 small Onion (finely chopped)
• 4 tbsps grated Coconut or Coconut powder
• 3-4 Green chillies (finely chopped)
• 1 tsp Cumin seeds
• 1 tbsp Coriander leaves (chopped)
• 1 tsp Lemon juice
• 3 -4 tbsp cooked Rice (mashed)
• (ONE of the following)
• 1 cup of fresh or dry Fenugreek leaves OR 1 cup of grated Carrots OR 1 cup of boiled (whole) lentils OR boiled Beans OR 2 medium size Onions finely chopped
• Salt as required
Method:
- Mix all the ingredients with some warm water to make a dough that is softer than chapatti dough.
- Grease a pan and your palm well. Take a ball of dough and pat it into a roti on the pan.
- Place the pan on the stove and cook well on both sides, turning the roti once.
- Spread 1 tsp butter on the hot roti and serve it with coconut chutney or sauce.
