Ingredients:

• 1 – Brinjal (cut into small pieces)
• 2 – Tomatoes
• oil
• salt
• Turmeric -1/2 tsp
• Sambhar powder – 1 tsp
• Ginger – a small piece
• Moong dal – 1/2 cup, cooked
• Tamarind paste – mix it with 1.5 cups of water
• Mustard Seeds – 1 tsp
• Bengal Gram dal – 1 tsp
• few sprigs – Curry leaves

Method:

  1. Cut the brinjal and tomatoes into fine pieces.
  2. In a pan, put some oil and add mustard seeds to it.
  3. When the seeds splutter, add Bengal gram dal to it.
  4. When the dal turns golden brown in colour, add the curry leaves to it.
  5. Add the tomatoes and brinjal pieces and fry it for about a minute.
  6. Then add the tamarind water to this.
  7. Add turmeric, ginger, salt and sambhar powder and allow it to boil for a few minutes.
  8. When the brinjal and tomatoes are cooked, add the cooked dal to this.
