
Ingredients:
• 1 – Brinjal (cut into small pieces)
• 2 – Tomatoes
• oil
• salt
• Turmeric -1/2 tsp
• Sambhar powder – 1 tsp
• Ginger – a small piece
• Moong dal – 1/2 cup, cooked
• Tamarind paste – mix it with 1.5 cups of water
• Mustard Seeds – 1 tsp
• Bengal Gram dal – 1 tsp
• few sprigs – Curry leaves
Method:
- Cut the brinjal and tomatoes into fine pieces.
- In a pan, put some oil and add mustard seeds to it.
- When the seeds splutter, add Bengal gram dal to it.
- When the dal turns golden brown in colour, add the curry leaves to it.
- Add the tomatoes and brinjal pieces and fry it for about a minute.
- Then add the tamarind water to this.
- Add turmeric, ginger, salt and sambhar powder and allow it to boil for a few minutes.
- When the brinjal and tomatoes are cooked, add the cooked dal to this.
