Ingredients:

• 1 – green bell pepper, cut into squares
• 1 – yellow pepper, cut into squares
• 8 – cherry Tomatoes or 4 – medium Tomatoes
• 8 -cauliflower florets
• 8 – fresh or canned Pineapple chunks
• 8 – cubes Tofu
• 1 cup – boiled rice, to serve (optional)
• For the marinade
• 1 tbsp- vegetable oil
• 2 tbsp – Lemon juice
• 1 tsp – salt
• 1 tsp – finely ground black pepper
• 1 tbsp – clear Honey
• 2 tbsp – chilli sauce

Method:

  1. Thread the prepared vegetables, pineapple and tofu cubes on to four skewers, alternating the ingredients.
  2. Prepare the marinade by mixing together all the ingredients. If the mixture is a little too thick, add 1 tbsp water to dilute it a little.
  3. Brush the skewers with the seasoned oil and ready it for barbecuing.
  4. Cook on a hot barbecue for 10 minutes, until the vegetables are done. Turn the vegetables often and brush the marinade every time.
  5. Can be served on a bed of plain rice.
