
Ingredients:
• 400g – val beans (anapa ginjalu)
• 1 medium onion, chopped fine
• 4 green chillies, chopped fine (reduce the no. for children)
• 1 red chilli, broken into pieces
• 1/4 tsp – cumin
• 6 peeled and crushed Garlic Cloves
• 8 Curry leaves
• 2 tsp – chopped, Coriander leaves
• 1.5 tbsp – desiccated Coconut powder (fresh if available)
• Salt
• 1 tbsp – oil
• 1/4 tsp – Mustard Seeds
• 1 tsp – Urad Dal (split)
Method:
- Boil the beans with salt till tender, drain and keep aside,
- Heat oil, add mustard seeds, urad dal, cumin, garlic, curry leaves and red chilli.
- Fry till the seeds splutter and dal changes colour to light brown.
- Add onions, green chillies and fry till onion becomes soft.
- Add the boiled beans, mix well, cover and cook for 3-4 minutes.
- Stir a couple of times.
- Sprinkle coriander leaves and desiccated coconut powder, mix well before removing from fire.
- Serve as tea time snack.
