Ingredients:

• 450 g – Cake Flour
• 300 g – plain flour
• 2 cups – Sugar
• 2 tbsp – baking powder
• 1/4 tsp – salt
• 200 g – unsalted Butter (cubed)
• 4 – eggs
• 1 cup – whole Milk
• 1 tsp – vanilla essence
• For the frosting:
• Whipping Cream
• powdered Sugar
• Pink colour

Method:

  1. Preheat the oven and line cupcake pans with paper liner.
  2. Mix flours, sugar, baking powder, salt and mix on low speed until combined.
  3. Add butter, mixing until just coated with flour.
  4. In another bowl, whisk eggs, milk, vanilla essence.
  5. On medium speed, add the wet ingredients in 3 batches, beat until incorporated, but do not beat too much.
  6. Pour the batter in greased cups filling only about 2/3 full.
  7. Bake for 18-20 mins.
  8. For the frosting:
  9. Mix all the ingredients together and once the cake is cooled, spread the frosting on top of it.
