Ingredients:

• 1 cup – American Corn (boiled)
• 1.5 cup – mayonnaise
• 14 slices – fresh bread
• 50 gms – Butter
• 1 – small Capsicum (finely chopped)
• 1 – small Tomato (desseded and finely chopped)
• Pepper – to taste
• Salt – to taste

Method:

  1. In a bowl, mix together corn, mayonnaise, capsicum, tomato, salt, and pepper.
  2. Refrigerate for 15 to 20 minutes.
  3. Trim the sides of the bread.
  4. Apply butter on all the slices.
  5. Place 2 tbsp of the corn-mayonnaise mixture in the center of a slice of bread and evenly spread it.
  6. Place another buttered slice on top.
  7. Gently cut the sandwich diagonally into two halves.
  8. Repeat with remaining slices of bread and corn-mayonnaise mixture.
  9. Serve with tomato ketchup.
