
Ingredients:
• 1 cup – American Corn (boiled)
• 1.5 cup – mayonnaise
• 14 slices – fresh bread
• 50 gms – Butter
• 1 – small Capsicum (finely chopped)
• 1 – small Tomato (desseded and finely chopped)
• Pepper – to taste
• Salt – to taste
Method:
- In a bowl, mix together corn, mayonnaise, capsicum, tomato, salt, and pepper.
- Refrigerate for 15 to 20 minutes.
- Trim the sides of the bread.
- Apply butter on all the slices.
- Place 2 tbsp of the corn-mayonnaise mixture in the center of a slice of bread and evenly spread it.
- Place another buttered slice on top.
- Gently cut the sandwich diagonally into two halves.
- Repeat with remaining slices of bread and corn-mayonnaise mixture.
- Serve with tomato ketchup.
