Ingredients:

• 1 cup – Wheat flour
• 1.5 cups – all-purpose flour
• 1/2 cup – chocolate chips
• 1/2 cup – Sugar
• 1 cup – oil
• 2 tbsp – flaxseed meal
• 1/2 cup – Apple sauce
• 1/2 cup – finely grated Cucumber
• 1/2 cup – walnuts, chopped roughly
• 1/2 tsp – baking powder
• 1 tsp – baking soda
• A pinch – salt

Method:

  1. Preheat the oven to 350 degree F
  2. Grease well a loaf pan and keep aside.
  3. Sieve together the flours, baking powder, baking soda and keep aside.
  4. Mix the flaxseed meal with 6 tbsp of lukewarm water and keep aside.
  5. Whisk the oil, apple sauce, salt and sugar together till the sugar dissolves, now add in the flax seed meal mixture, grated cucumber and mix for few mins.
  6. Melt the chocolate chips with two tbsp of water in microwave oven for a minute, mix it well and add it to the oil mixture.
  7. Make a well in a middle of the dry ingredients, stir in the wet ingredients and mix with a spatula, don’t over mix the batter.
  8. Fold in the chopped walnuts and pour the batter in the already prepared loaf pan.
  9. Bake for 20-25minutes or until a skewer inserted comes out clean.
