Ingredients:
• 1 cup – Wheat flour
• 1.5 cups – all-purpose flour
• 1/2 cup – chocolate chips
• 1/2 cup – Sugar
• 1 cup – oil
• 2 tbsp – flaxseed meal
• 1/2 cup – Apple sauce
• 1/2 cup – finely grated Cucumber
• 1/2 cup – walnuts, chopped roughly
• 1/2 tsp – baking powder
• 1 tsp – baking soda
• A pinch – salt
Method:
- Preheat the oven to 350 degree F
- Grease well a loaf pan and keep aside.
- Sieve together the flours, baking powder, baking soda and keep aside.
- Mix the flaxseed meal with 6 tbsp of lukewarm water and keep aside.
- Whisk the oil, apple sauce, salt and sugar together till the sugar dissolves, now add in the flax seed meal mixture, grated cucumber and mix for few mins.
- Melt the chocolate chips with two tbsp of water in microwave oven for a minute, mix it well and add it to the oil mixture.
- Make a well in a middle of the dry ingredients, stir in the wet ingredients and mix with a spatula, don’t over mix the batter.
- Fold in the chopped walnuts and pour the batter in the already prepared loaf pan.
- Bake for 20-25minutes or until a skewer inserted comes out clean.
