Ingredients:

• 1 cup – whole Wheat pastry flour
• 1/2 cup – brown Rice flour
• 1/2 cup – rolled oats
• 1/2 cup – cornmeal
• 1/2 cup – all-purpose flour
• 1/2 cup – Sugar
• 1/4 cup – maple syrup
• 1/2 tsp – Cinnamon powder
• 1/2 tsp – Ginger powder
• 1 cup – carrots, grated
• 1 tsp – Flax seed powder
• 1 tsp – baking soda
• 1 tsp – baking powder
• 1 cup – Coconut Milk
• 1/2 cup – Canola Oil

Method:

  1. Mix the whole wheat pastry flour, rolled oats, cornmeal, brown rice flour, all-purpose flour with cinnamon powder, ginger powder, baking soda and baking powder in a large bowl
  2. Preheat the oven to 350 degree F
  3. Now mix the coconut milk, flax seed powder, maple syrup, canola oil, grated carrots and sugar, whisk everything well until the sugar gets well dissolved
  4. Fold the wet ingredients to dry ingredients using a spatula, don’t over mix
  5. Fill the silicon muffin pan with the muffin batter and bake the muffins for 20-25 mins in middle rack
  6. Cool and serve.
