Ingredients:
• 1 cup – whole Wheat pastry flour
• 1/2 cup – Corn flour
• 1.5 cups – Pineapple puree
• 1/3 cup – oil
• 1/2 cup – Sugar
• 1/4 cup – pineapple, chopped as small bites
• 1 tsp – vanilla extract
• 1/4 tsp – salt
• 1 tsp – baking powder
• 1/2 tsp – baking soda
Method:
- Preheat the oven to 350 degree F
- Sift the flours, baking powder, baking soda and salt together and keep aside
- In another bowl beat together the pineapple puree, oil, sugar and vanilla extract.
- Now gradually add the dry ingredients to the wet ingredients.
- Add pineapple pieces and mix everything with a spatula – don’t over mix.
- Pour batter to the greased muffin tin and bake for 20-25 mins in middle rack of the oven
