Ingredients:

• 100 g – wholemeal flour
• 250 g – white bread flour
• 1 tsp – dried Yeast
• 1 tbsp – Olive oil
• 210 ml – warm water
• 2 tsp – Honey
• 1 tsp – salt

Method:

  1. Combine flour, salt and yeast together.
  2. Make a well in the centre. Add oil, honey, water and knead it together, to make a smooth dough.
  3. Transfer to the work surface and knead it again for 5 minutes.
  4. Place the dough in an oiled bowl and cover it with a cling film.
  5. Leave it in a warm place and allow it to rise, for 1 hour or until doubled in bulk.
  6. Take the dough, punch the air back and divide the dough into 6 to 10 balls.
  7. Shape it into smooth balls, cover and allow it to rest for 10 minutes.
  8. Preheat the oven to 230 degree Celsius.
  9. Take the dough, roll each ball into oval shape.
  10. Cover it and allow it to rest for 15 minutes.
  11. Place the pitas in the hot baking sheet, 2 or 3 at a time, cook for 2 minutes or until puffed(it does not have to look brown on top).
  12. Repeat with the remaining dough.
  13. Serve the bread warm, with curries and salad.
