Ingredients:
• For the cake batter:
• 1 cup – Oat flour
• 1 cup – whole Wheat flour
• 1 tsp – baking soda
• 1/2 tsp – salt
• 1/2 cup (1 stick) – unsalted Butter
• 2/3 cup – packed light or dark Brown sugar
• 1.5 cups – mashed Bananas (about 3-4 large Bananas)
• 1/2 cup – Greek yogurt, fat free
• 1 tsp – vanilla extract
• 1/2 cup – chopped Walnuts
• 1 cup – chocolate or toffee chips (optional)
• For the crunch topping:
• 3/4 cup – old fashioned Oats
• 1/2 cup – packed light or dark Brown sugar
• 1/2 tsp – ground Cinnamon
• 1/4 tsp – salt
• 2 tbsp – unsalted butter, melted
• 1/4 cup – chopped Walnuts
Method:
- Preheat the oven to 350 degrees F. Grease an 8 inch square pan.
- For the cake batter:
- Whisk together the flour, soda and salt in a medium bowl.
- Cream together butter and sugar in a large mixing bowl until light and fluffy.
- Add in half of the flour and then add the bananas, yogurt and vanilla. Add the remaining flour, nuts and chips.
- Mix until evenly moistened.
- Transfer the batter to the prepared pan.
- To make the topping:
- Combine all the dry ingredients (except nuts) in a bowl.
- Stir in the melted butter until the moisture forms large crumbs. Stir in chopped nuts.
- Sprinkle the topping over the batter in the pan.
- Bake until the edges pull away from the pan and a cake tester inserted in the centre comes out clean. It takes about 30-45 minutes.
- Remove and place on a rack to cool for 20 minutes before serving warm as it is or with ice cream.
