
Ingredients:
• For Yakhni:
• 1 kg – Mutton
• 2 long pieces of Cinnamon
• 4 Cloves
• 6 pods Garlic
• 3 Green chillies
• 4 grains black pepper
• 10 cups – water and salt to taste
• For Rice:
• 250 gms – Rice
• 3 sliced Onions
• 2 tbsps – Turmeric powder
• 1 tbsp – Cumin seeds
• 1 long Cinnamon
• 4 whole Cloves
• 2 Cardamoms whole
• 3 Bay Leaves
• 1 tsp – chilli powder
• 8 tbsps – Ghee
• 4 large silver foil
Method:
- Wash well and cut up meat.
- Place all the ingredients in a vessel and bring them to boil.
- Simmer gently till meat is cooked.
- Remove the meat from the broth and keep aside
- Wash and soak rice.
- Fry onions to a golden brown colour.
- Add spices and fry them.
- Add soaked rice and fry for a short while.
- Add broth and let the rice cook.
- When the rice is half cooked, add the meat, cover with rice and cook on a slow fire until fully cooked.
- Serve hot with curry or raitas, garnished with silver foil.
