Ingredients:

• For Yakhni:
• 1 kg – Mutton
• 2 long pieces of Cinnamon
• 4 Cloves
• 6 pods Garlic
• 3 Green chillies
• 4 grains black pepper
• 10 cups – water and salt to taste
• For Rice:
• 250 gms – Rice
• 3 sliced Onions
• 2 tbsps – Turmeric powder
• 1 tbsp – Cumin seeds
• 1 long Cinnamon
• 4 whole Cloves
• 2 Cardamoms whole
• 3 Bay Leaves
• 1 tsp – chilli powder
• 8 tbsps – Ghee
• 4 large silver foil

Method:

  1. Wash well and cut up meat.
  2. Place all the ingredients in a vessel and bring them to boil.
  3. Simmer gently till meat is cooked.
  4. Remove the meat from the broth and keep aside
  5. Wash and soak rice.
  6. Fry onions to a golden brown colour.
  7. Add spices and fry them.
  8. Add soaked rice and fry for a short while.
  9. Add broth and let the rice cook.
  10. When the rice is half cooked, add the meat, cover with rice and cook on a slow fire until fully cooked.
  11. Serve hot with curry or raitas, garnished with silver foil.
