
Ingredients:
• 2 cups – cooked Rice
• 1/2 cup – Zucchini (chopped)
• 1/4 cup – Peanuts
• 1 – Onion (chopped)
• 2 – Green chillies (slit open)
• 1 tsp – Garam Masala powder
• 1 tsp – pav bhaji masala
• Oil as required
• 1 tsp – Cumin seeds
• 1 tsp – shah Jeera
• A few sprigs – Coriander leaves (chopped)
Method:
- Heat enough oil in a microwave safe bowl for 40-45 seconds on high.
- Add cumin seeds and shah jeera, and cook for a minute.
- Add onions, green chillies and salt, cook for 5-7 minutes until the onions turn translucent.
- Add peanuts and cook for 2 minutes.
- Add chopped zucchini, garam masala powder, pav bhaji powder, and cook for 10 minutes until the vegetables are well cooked.
- Add cooked rice, chopped coriander leaves and toss everything gently, cook for 2-3 minutes. Serve hot with potato chips or spicy potato roast.
