Ingredients:
• 2 tbsp. – Butter
• 1 French loaf, cut in four portions and sliced in half horizontally
• 50 gms – zucchini, sliced and grilled
• 50 gms – mushrooms, sliced and sauteed
• 1/2 bunch – spinach, blanched and chopped
• 1.5 tbsp. – chopped garlic, oven roasted until lightly charred
• 1 tbsp. – Olive oil
• salt and pepper, to taste
• 60 gms – French fries
Method:
- Heat butter in a griddle and grill bread slices.
- Top the lower four bread slices with the veggies and roasted garlic.
- Drizzle over with the olive oil, close sandwiches and warm in the oven at 180 degrees C for five mins.
- Serve with French fries.
