Ingredients:

• 1 cup fresh Basil
• 1 tsp. Garlic
• 2 tbsp. parsley, chopped
• 9 tbsp. Olive oil
• 2 tbsp. Pine Nuts
• ½ cup Mushrooms
• ½ cup green beans
• ½ cup red pepper
• ½ fresh Asparagus
• ½ cup black Olives
• ¼ tsp. salt
• 150 gms. dry Pasta
• ½ cup parmesan cheese

Method:

  1. Put the basil, garlic, pine nuts and half of the olive oil in a blender.Puree until smooth.
  2. Put the rest of the olive oil in a skillet, heat, and add the vegetables, sauté for 5 minutes.
  3. Cook pasta in the usual way, and drain.
  4. Stir in the pureed mixture into the vegetable and heat for 1 minute.
  5. Pour the vegetable sauce over the pasta.
  6. Sprinkle with parmesan cheese and decorate with a few black olives if wished.
