
Ingredients:
• 8 slices – bread
• 1 tbsp – chopped Coriander leaves
• 4 slices – cheese
• Butter as required
• 3 – green chillies, finely chopped
• 4 – eggs
• 1 – large onion, finely chopped
• salt and pepper to taste
• Ghee
Method:
- Butter the slices of bread.
- Place a slice of cheese between two slices. Press down and halve the sandwich diagonally.
- Break the eggs into a shallow plate and beat well. Keep aside.
- Mix onion, coriander leaves and chillies and season with salt and pepper. Add the beaten eggs.
- Soak the sandwich in the egg mixture, allowing a generous coating on both sides.
- Fry in hot ghee until golden brown.
