Ingredients:

• 2 cups – Rice
• 7 – large Tomatoes
• 3 – large Onions (1 – for garnishing)
• 1 cup – Mint leaves
• 1 cup – Coriander leaves
• 1 – large Green chilli (split lengthwise)
• 2 tsps – Ginger Garlic paste
• 2 – 3 Cloves
• 3 – small sticks of Cinnamon
• 1/2 tsp – Cumin seeds
• Salt and chilli powder to taste
• 3 tbsp – oil
• 4.5 cups – water

Method:

  1. Wash and soak the rice for 10 mins.
  2. Chop tomatoes and onions into small pieces. Wash and chop coriander and mint leaves finely.
  3. Heat oil in the pressure cooker.
  4. Add cumin seeds, cloves, cinnamon, mint, coriander, green chilli. Fry for a few seconds and add ginger garlic paste.
  5. Add onions and after a few mins, add tomatoes. Mix and fry till tomatoes are tender.
  6. Add salt and chilli powder.
  7. Drain water and add the rice to the tomato onion mix. Add 4.5 cups water.
  8. Mix well and pressure cook for 4 – 5 whistles on full flame.
  9. Fry sliced onions till golden brown and keep aside.
  10. When steam subsides, mix well before serving.
  11. Garnish with coriander leaves and fried onions.
