Ingredients:
• 2 cups – Rice
• 7 – large Tomatoes
• 3 – large Onions (1 – for garnishing)
• 1 cup – Mint leaves
• 1 cup – Coriander leaves
• 1 – large Green chilli (split lengthwise)
• 2 tsps – Ginger Garlic paste
• 2 – 3 Cloves
• 3 – small sticks of Cinnamon
• 1/2 tsp – Cumin seeds
• Salt and chilli powder to taste
• 3 tbsp – oil
• 4.5 cups – water
Method:
- Wash and soak the rice for 10 mins.
- Chop tomatoes and onions into small pieces. Wash and chop coriander and mint leaves finely.
- Heat oil in the pressure cooker.
- Add cumin seeds, cloves, cinnamon, mint, coriander, green chilli. Fry for a few seconds and add ginger garlic paste.
- Add onions and after a few mins, add tomatoes. Mix and fry till tomatoes are tender.
- Add salt and chilli powder.
- Drain water and add the rice to the tomato onion mix. Add 4.5 cups water.
- Mix well and pressure cook for 4 – 5 whistles on full flame.
- Fry sliced onions till golden brown and keep aside.
- When steam subsides, mix well before serving.
- Garnish with coriander leaves and fried onions.
