Ingredients:

• 250 g – yard long beans, chopped
• 1 cup – water
• 1 – onion, chopped
• 2 – green chillies, slit
• 1/2 tsp – Mustard Seeds + Urad Dal
• Few – Curry leaves
• Salt – to taste
• Oil – as required
• To Grind:
• 3 tbsp – grated Coconut
• 3 – dry Red Chillies
• 1 tbsp – Cumin seeds

Method:

  1. In a microwave-safe bowl, place the chopped yard long beans, salt and 1 cup of water.
  2. Cook in the microwave for 10 minutes on high.
  3. Drain the excess water and keep the cooked beans aside.
  4. Meanwhile, grind the coconut, dry red chillies and cumin seeds into a coarse paste.
  5. Heat enough oil and add the mustard seeds, curry leaves and urad dal.
  6. Allow them to splutter.
  7. Add the onion and green chillies, saute until the onions turns translucent.
  8. Now add the ground paste and cook it for few minutes.
  9. Finally add the cooked yard long beans and salt, cook on a simmer.
  10. Serve hot as side dish.
