Ingredients:
• 2 – medium Chicken breasts (boneless and skinless)
• 1.5 cups – fresh bread crumbs (pulse day old bread and some Parsley in a food processor)
• 1/2 cup – curly parsley, finely chopped
• 1 tsp – Cajun spices
• 1/2 tsp – black pepper powder
• Salt to taste
• 1/2 tsp – Red Chilli powder
• 5 tsp – grated Parmesan cheese
• 1/4 cup – yogurt
• Oil to fry
• For Cajun spice mix: 2 tbsp – paprika
• 1 tsp – salt
• 1 tsp – black pepper
• 1 tsp – Garlic powder
• 2 tsp – Onion powder
• 2 tsp – Red Chilli powder
• 1 tsp – dried Oregano
• 1 tsp – dried Thyme
• 1 tsp – cumin powder
Method:
- Wash and dry chicken breast. Cut into strips and pound it to flatten it.
- Mix some salt and black pepper with the yogurt.
- Marinate chicken strips with yogurt for 1/2 hour.
- Mix bread crumbs, parsley, Parmesan and spices.
- In frying pan, heat 3-4 tbsps oil.
- Coat yogurt-covered chicken strips with bread crumb mix and pan fry in oil till it becomes light brown or until cooked.
- Tastes good by itself or with ketchup or any hot sauce.
