Ingredients:
• 500g Cauliflower
• 2 large Potatoes
• 100g Green peas
• 2 large Onions
• 6 Cloves Garlic
• 1in Ginger
• 3 or 4 Green chillies
• 2 tsp coriander powder
• 1 tsp amchur powder or 1 Lime
• 1 tsp Garam Masala
• 1 tsp Turmeric
Method:
- Cut cauliflower and potatoes into large pieces.
- Chop onion, ginger, garlic and green chillies.
- In a wok heat 1 tbsp oil. When the oil is heated add onion, ginger, garlic and green chillies.
- When the onion starts browning add cauliflower, potatoes and green peas.
- Add a little turmeric. Stir fry for 5 mins.
- Add salt to taste and cover the vessel with a tight lid. Cook for about 10 mins on slow fire.
- Lastly, add coriander powder, garam masala and lime juice/amchur powder to taste.
- Garnish with finely chopped coriander leaves on top. Serve with rotis.
