Ingredients:
• 100 g – paneer, cubed
• 2 – onions, cubed
• 3 – Tomatoes (small), chopped
• 1 – capsicum, cubed
• 1 tbsp – ginger, finely chopped
• 2 – Green chillies
• 1.5 tsp – Red Chilli powder
• 1 tbsp – dhaniya/coriander powder
• 3/4 tsp – Garam Masala powder
• 1/8 tsp – Turmeric powder
• Salt as needed
• 1 tsp – kasoori Methi
• 2 tbsp – coriander leaves, chopped
• 1/2 cup – water
• To temper:
• 3 tbsp – oil
• 1 tsp – Coriander seeds
Method:
- Heat oil in a kadai and fry coriander seeds.
- Now add ginger and fry for 2 mins.
- Add chopped onion, green chillies and fry till onion turns transparent.
- Add the chopped tomatoes and salt.
- Fry till tomatoes turn soft.
- Now add all the powders – chilli, dhania, garam masala and turmeric.
- Mix well.
- Now add the cubed capsicum and fry for 1-2 mins.
- See to it that the crunchiness and colour should not change.
- Add the paneer cubes and kasoori methi and 1/2 cup water.
- Mix well.
- Cook till the masala coats paneer well.
- Now garnish with chopped coriander leaves and serve hot with rice, naan or roti.
