Ingredients:
• One small tin – Pineapple chunks.
• 6 tbsp – jaggery.
• 1/4 tsp – turmeric.
• 2-3 – red chillies.
• 6 – black pepper.
• 2 tbsp – Channa dal.
• 1 tbsp – coriander seeds.
• 1 tbsp – Rice powder.
• 5 tbsp – grated coconut.
• Salt to taste.
• a few sprigs – curry leaves.
Method:
- Add salt and turmeric to the pineapple cubes. Pressure cook for 10 mins.
- Transfer to a cooking container. Add jaggery and let it boil till the smell of raw jaggery disappears.
- Fry red chilli, black pepper, channa dal, coriander seeds in 1 tsp oil. After this turns brown, add the grated coconut and heat for about a minute.
- Grind to a fine powder. Add rice powder to this and mix well.
- Make a paste of the above powder with a little water and add to cooked pineapple. Let it boil for a few minutes. Season with mustard seeds and curry leaves.
- Serve hot with rice and sambar.
