Ingredients:
• 450 g – button Mushrooms
• 300 ml -red wine
• 550 g – tomatoes, seeded & chopped
• 1 – onion, chopped finely
• 1 Clove – garlic, chopped finely
• 1 tbsp – Coriander seeds
• 1 tbsp – Tomato puree
• 2 tbsp – Olive oil
• black pepper, ground as required
• Parsley as required
• salt as required
Method:
- Heat the olive oil in a pan, add the chopped onions, garlic and saute till they change colour.
- Next add the coriander seeds, wine, tomato puree and stir well.
- Add the button mushrooms, chopped tomatoes, salt and pepper to taste.
- Let the mixture boil and remove once the mushrooms become soft.
- Remove from heat, cool and chill for several hours before serving.
