Ingredients:

• 250 g – fish fillets
• 1/2 cup – Maida
• 1/2 cup – thick Coconut Milk
• 2 – eggs, lightly beaten
• 1 tsp – garlic, minced and crushed
• 1 tbsp – curry powder
• 1/3 cup – water
• 1 tbsp – Lime juice
• 1 tsp – Sugar
• 1 tbsp – oil
• salt, pepper and Lime juice to taste
• bread crumbs to coat
• oil to shallow fry
• curry sauce
• salt to taste

Method:

  1. Cut fish fillets into 4 pieces.
  2. Apply salt, pepper and lime juice.
  3. Roll in maida.
  4. Dip in egg, coat with bread crumbs place on a plate.
  5. Cover and refrigerate. (minimum 15 minutes)
  6. To prepare curry sauce, heat the oil and brown garlic in it.
  7. Add curry powder, fry for few seconds.
  8. Add water, mix well and simmer gently for 2-3 minutes.
  9. Add coconut milk and simmer till the sauce thickens.
  10. Remove from heat; add lime juice, salt and sugar.
  11. Heat the oil in fry pan, to a depth of 1.5 cm.
  12. Fry the fish gently, about 2-3 minutes on each side till it flakes when tested with a fork. (do not overcook)
  13. Drain well and serve with curry sauce.
