
Ingredients:
• 250 g – fish fillets
• 1/2 cup – Maida
• 1/2 cup – thick Coconut Milk
• 2 – eggs, lightly beaten
• 1 tsp – garlic, minced and crushed
• 1 tbsp – curry powder
• 1/3 cup – water
• 1 tbsp – Lime juice
• 1 tsp – Sugar
• 1 tbsp – oil
• salt, pepper and Lime juice to taste
• bread crumbs to coat
• oil to shallow fry
• curry sauce
• salt to taste
Method:
- Cut fish fillets into 4 pieces.
- Apply salt, pepper and lime juice.
- Roll in maida.
- Dip in egg, coat with bread crumbs place on a plate.
- Cover and refrigerate. (minimum 15 minutes)
- To prepare curry sauce, heat the oil and brown garlic in it.
- Add curry powder, fry for few seconds.
- Add water, mix well and simmer gently for 2-3 minutes.
- Add coconut milk and simmer till the sauce thickens.
- Remove from heat; add lime juice, salt and sugar.
- Heat the oil in fry pan, to a depth of 1.5 cm.
- Fry the fish gently, about 2-3 minutes on each side till it flakes when tested with a fork. (do not overcook)
- Drain well and serve with curry sauce.
