Ingredients:
• 200 g – glass (transparent) noodles
• 6 – big prawns, cleaned, shelled and deveined
• 1 tbsp – Corn oil
• 5 – Garlic cloves, finely chopped
• salt and pepper to taste
• 6 cups – vegetable stock or water
• 3 tbsp – soya sauce.
• Vegetables:
• 1.5 cups – celery, finely chopped
• 1.5 cups – cabbage, finely chopped
• 2 stalks spring onions, finely chopped
• Garnish:
• 1 stalk spring onions, finely chopped.
Method:
- To prepare the prawns:
- Chop all the vegetables in small cubes or dice. Heat a separate wok or pan.
- Add the oil when the pan is hot.
- Add the garlic and stir-fry until brown.
- Add the vegetable stock.
- Bring it to boil and simmer for 10 minutes. A few minutes before serving, add prawns and vegetables to the boiling stock and cook (about 45 minutes only). Add the glass noodles, salt and pepper to taste, soya sauce and garnish with finely chopped spring onions.
