Ingredients:

• 2 medium sized Onions
• 2 Cloves of Garlic
• 8 Tomatoes
• 2 tbsps Butter
• 1 tsp ground Ginger
• 2 tsps ground Coriander leaves
• A pinch of Turmeric
• 1/4 tsp chilli powder
• 1 tsp ground cumin
• 1 tsp ground black pepper
• Salt to taste
• 1 tsp Garam Masala
• 6 hard boiled eggs

Method:

  1. Peel the onions and garlic cloves. Slice one onion thinly. Chop remaining onion with the garlic.
  2. Chop the tomatoes.
  3. Heat the butter and fry the sliced onion until golden.
  4. Remove from heat, add the onion and garlic mixture, ginger and the spices except garam masala. Add salt to taste.
  5. Fry for 5 minutes.
  6. Add tomatoes.
  7. Simmer until the mixture reaches desired consistency.
  8. Add garam masala and shelled and halved hard-boiled eggs.
  9. Simmer for a further 5 minutes and serve hot with rotis.
