Ingredients:
• For salad:
• 2 cups – cooked Egg noodles
• 1 cup – cooked Chicken breast, diced
• 1/2 cup – red capsicum, diced (discard seeds)
• 1 – cucumber, diced (discard seeds)
• 1/2 cup – salted Peanuts
• salt to taste
• For dressing:
• 2 tbsp – Tomato sauce
• 1 tbsp – Lime juice
• 1 tbsp – Honey
• 2 tbsp – oriental sesame sauce
• 1 tsp – roasted chilli paste
• 2 tsp – dark soya sauce
• To garnish:
• 1 tsp – chopped Spring onion
• 1 tsp – Coriander leaves
Method:
- Combine the ingredients for the salad.
- Mix together the dressing ingredients.
- Pour over the noodle mixture and toss.
- Serve garnished with chopped spring onions and coriander leaves.
