
Ingredients:
• 12 ounces – panettone, sliced into squares
• 1/4 cups – dried apricots, chopped
• 1 cup – chopped Walnuts
• 2.5 cups – reduced fat Milk
• 1 tsp – vanilla extract
• 2 tbsp – maple syrup
• A pinch – Nutmeg powder
• Light Brown sugar for sprinkling
Method:
- Grease a shallow baking dish with Pam Butter Flavoured Spray.
- Arrange half the panettone in the dish.
- Scatter all the chopped apricots on the bread and half of the walnuts. Then add another layer of panettone on top of it.
- Heat the milk and vanilla extract in a saucepan. Simmer for a while and then add the maple syrup and nutmeg and whisk well.
- Pour the milk over the dish, lightly pressing down the bread till it submerges in the milk.
- Leave it to infuse for 5-10 mins. Pre-heat the oven to 425 degrees F.
- Sprinkle the rest of the walnuts and brown sugar and bake for 10-15 mins or until golden.
