
Ingredients:
• 20 to 25 – tender plump healthy Okra
• 1 tsp – Lemon juice
• 1/4 tsp – Turmeric powder
• 1/4 tsp – tandoori masala
• 1/2 tsp – Sugar
• 1/4 tsp – dried Mint powder
• 1/4 cup – Curd (hung for 45 minutes)
• 1 tsp – Olive oil
• To taste – salt
Method:
- Wash and wipe okra, checking and discarding any infected ones.
- Mix all the other ingredients together, in a large bowl.
- Put in okra and toss to coat with the marinating mixture.
- Keep aside for 30 minutes or refrigerate, till required.
- Pierce the okras from side to side into a skewer.
- Place over hot coals or barbeque or under a grill.
- Rotate occasionally and cook enough, to tenderize.
- Brush, with a little oil in between, if required.
- Serve hot, with other barbequed vegetables, dips and rice.
