
Ingredients:
• 1 – big violet Brinjal
• 2 cup – fresh Curd
• 1 – medium onion, finely chopped
• 1 – medium tomato, finely chopped
• 2 – green chillies, finely chopped
• A few – finely chopped Coriander leaves for garnishing
• 1 tsp – Mustard Seeds
• 2 tsp – oil for frying
• Salt to taste
Method:
- With a skewer, pierce and roast the brinjal over open flame on the gas stove
- Peel the skin of the brinjal and get the cokked pulp
- Mash the pulp with a spoon and add this to the fresh curd
- Heat the oil for frying and splutter the mustard seeds
- Switch off the gas stove and pour the seeds over the curds and brinjal
- Add chopped onion, tomatoes and green chillies
- Add salt to taste and mix well
- Serve with any pulao or flavored rice.
