Ingredients:
• 1 cup – Rice
• 2 to 3 medium-sized boiled Potatoes (mashed well)
• 2 tbsp – Ghee or Butter
• little Milk ( to soften the mashed potatoes)
• 2 – eggs (hard boiled)
• finely chopped Green chillies (as per taste)
Method:
- Clean, wash and soak the rice for about 30 minutes.
- Cook the rice to a smooth starchy consistency (do not drain away the starch).
- Mix together the mashed potatoes, ghee or butter, little milk and salt.
- Mash the eggs, add little salt and some chopped green chillies.
- Mix well.
- Serve steaming hot rice with mashed potatoes and eggs.
- To relish, eat with your fingers.
