Ingredients:

• 1/2 cup – vegetable oil
• 2 tbsp – all-purpose flour
• 1 cup – canned or cooked Pumpkin
• 1/2 tsp – salt
• 2 cups – Sugar
• 1/2 tsp – ground Cinnamon
• 1 tsp – baking soda
• 1/4 cup – Sugar
• 2 cups – finely chopped peeled apples
• 4 tsp – cold Butter
• 2.5 cups – all-purpose flour
• 2 eggs

Method:

  1. In a bowl, add sugar, baking soda, flour and salt.
  2. In another bowl, combine the eggs, pumpkin and oil and butter.
  3. Add into dry ingredients just until moistened.
  4. Fold in apples.
  5. Fill paper-lined muffin cups two-thirds full.
  6. Bake at 350 degrees for 35-40 minutes or until golden brown.
