Ingredients:
• 1 cup – Tamarind extract
• 10 – Shallots
• A few – Garlic Cloves
• 1 tbsp – Fenugreek seed
• 1/2 tsp – mustard
• 1/2 tsp – Urad Dal
• A few – Curry leaves
• 1/4 cup – gingili oil
• Salt to taste
• To roast and grind:
• 1 – dry Ginger
• 3 tbsp – Coriander seeds
• 15 – Black Peppercorns
• 1 tsp – Cumin seeds
Method:
- Dry roast and grind all the ingredients to a fine powder.
- Heat gingili oil in a heavy bottomed pan, add the mustard seed and urad dal, let it splutter.
- Add the fenugreek seeds, fry it.
- Add the shallot pieces, curry leaves and garlic pods to the oil, fry well.
- Add the prepared spice powder and salt to tamarind extract and mix well.
- Add it to the cooking vegetables, cook them for 20 to 25 mins in medium flame with the lid
- Once the oil separates from the kuzhambu remove from stove.
- Serve hot.
