Ingredients:

• 250 g – Asparagus chopped into small pieces
• 250 g – Mushrooms
• 3 tbsp – chopped Spring onions
• 1 tsp – Ginger chopped finely
• 1 tbsp – chopped Coriander leaves
• Salt to taste
• 1 tsp – ground black pepper
• 1 tsp -chillies powder
• 2 tbsp – oil.

Method:

  1. Heat oil in a pan and saute the spring onions and chopped ginger for a few minutes.
  2. Add the asparagus and mushrooms and stir fry for 2 or 3 mins.
  3. Add the chilli powder, pepper, salt and a little water and simmer till the asparagus and mushrooms are tender.
  4. Garnish with the chopped coriander leaves.
  5. Serve as a side dish.
