Ingredients:

• 1 cup – finely cut Cabbage
• 1/4 cup – finely cut Potatoes
• 1/4 cup – shelled peas
• 2 cups – cooked Rice
• 2 tbsp – grated Coconut
• 4 – Red Chillies
• 1 tbsp – Coriander seeds
• 1 tbsp – tur dal
• 5 – Cashew nuts
• 2 tbsp – Oil
• 2 tsp – Salt
• 1/4 tsp – Turmeric powder

Method:

  1. Soak red chillies, coriander and tur dal in enough water for 20 minutes.
  2. Take oil in a flat bottomed vessel and heat it. Add cashew nuts and fry till light brown. Remove the nuts in a plate.
  3. Add cut cabbage, potatoes, peas and cook after adding little water and salt.
  4. Grind the soaked masalas and coconut to a fine paste. Add to the cooked vegetables.
  5. Now add the cooked rice to this mixture and mix well.
  6. Add the fried cashew nuts and serve hot.
