Ingredients:

• 450 g – Carrots
• 2 Oranges
• 50 g – seedless Raisins
• pinch – castor Sugar
• pinch – dry mustard
• 3 tbsp – oil
• 1 tbsp – Vinegar
• pinch of salt
• pinch of pepper

Method:

  1. Peel or scrape carrots.
  2. Finely grate into a bowl.
  3. Using a sharp knife, cut rind and pith from oranges.
  4. Then holding oranges over a plate to catch juice, cut out segments of orange between membranes.
  5. Add orange segments to carrots with raisins.
  6. Place oranges juice, oil and remaining ingredients in a jar and shake well.
  7. Pour over salad and mix well.
