Ingredients:
• 1 head – Broccoli, cut into florets/1 pack of frozen and cut Broccoli
• 1 cup – Milk
• 1.5 cups – water
• 1-1.5 tsp – Corn flour (used for thickening the soup)
• a pinch of Nutmeg
• salt to taste
• 1/2 tsp – fresh ground pepper for garnishing
• croutons for garnishing
Method:
- Boil the broccoli until half done. Drain.
- Take a cup of water in a vessel and add milk.
- Add the boiled broccoli.
- Heat on medium flame, stirring frequently. Add salt.
- Dilute the corn flour with 1/2 cup of water.
- When the broccoli is done, add the corn flour water to the soup and heat on low flame until the soup thickens.
- Add nutmeg powder and heat for a minute.
- Serve hot in soup bowls garnished with pepper and croutons.
