Ingredients:
• 500 g- cod fish loin, cut into bite sized pieces
• 2 – green peppers, thinly sliced
• 115 g- button mushrooms, thinly sliced
• 1 – small onion, peeled and finely chopped
• 175 g – carrots, thinly sliced
• 650 g- peeled Potatoes
• 3 tbsp – Sunflower oil
• 1 tbsp- fresh parsley, chopped
• 100 g- cheddar cheese, grated
• 50 g- plain flour
• 1 cup – Milk
Method:
- Mix the grated cheese and flour in a saucepan and cook on a medium flame for the cheese sauce
- When the flour is brown add the milk and stir until the sauce thickens
- Now saute the onions until golden brown. Then add the carrots, mushrooms and peppers
- Now boil the potatoes for 15 – 20 mins and mash with a fork
- In an oven proof dish add half of the fried vegetables, then place the cod fish in a layer over this
- Add a layer of the boiled and mashed potatoes on it
- Then add the remaining vegetables on it. Layer this with the cheese sauce
- Add the salt and pepper on the top
- Preheat the oven to 190 C/ 375 F/ gas 5.
- Bake for 1 hour 30 mins until the top is a light golden colour
- Garnish with parsley
